My question is is there any way to delete it or modify it so it doesnt appear in that dropdown, so people dont use it by mistake?

I thought it would be as simple as find the Request Signoff flow, make a personal copy of it, then modify it. Webb27 aug. 2024 · By design, the built-in Request sign-off flow can only show approve staus in SharePoint Online. It cannot show who approved the document. For your requirement, I would suggest you create a cutom approval flow to show who approved the document in the column, Below is my demo for you:

We could not know the actions which was used to create this Flow.
